Winter Baileys Shake
One of our easy go-to desserts, when I'm all out of either ideas, ingredients or most likely energy is a bowl of ice cream dessert with crushed Oreo cookies. It's so simple that it's not really a recipe more a combination of techniques: scooping, crushing, drizzling. Everyone loves it, even me and I don't really have a sweet tooth. A couple of scoops of good ice cream - preferably cookies and cream but vanilla is good too - some Oreos crushed and sprinkled on top and a drizzle of caramel (has to be Starbucks - so good!) and that's it. But then, one evening a few weeks ago while I was making our 'go-to' dessert I had a Christmas cocktail brainwave - just for the grown-ups! What if I mixed the ice cream and caramel with the Oreos, poured in some milk and Baileys and gave it a delicious name like Winter Baileys Shake? So I did!
Winter Baileys Shake (Serves 2)
What you'll need:
- 4 oreos
- 4 scoops of cookies and cream ice cream
- A couple of squirts of caramel sauce
- 200 ml milk
- 4 fl oz Baileys
How to make it:
Break up the Oreos and pop in a pestle & mortar or blender. Crush or pulse a couple of times. Remove a tablespoon to use later as a garnish.
If using a blender add the ice cream, caramel sauce and milk and blend for about 30 seconds until the ingredients are combined. Add a generous drop of Baileys and pulse once or twice until mixed through. If using a pestle & mortar to crush the Oreos - like we usually do - just add the crushed Oreos to a medium sized bowl followed by the rest of the ingredients and mix well.
Pour into two glasses, garnish with the crushed Oreos, pop in a straw and enjoy one of Christmases great pleasures!
